How do you choose a server location?

Lately I’ve been thinking about refreshing the setup for a couple of my side projects, and I keep stumbling on the same question — how do people even pick a country for hosting? Some say just measure ping and go with whatever’s fastest, others mention data-retention laws or how quickly the provider provisions the hardware. I’d appreciate hearing how you approach it in real life, not theory from docs.
